Chinese Chicken Salad

Dressing
3 1/2 Tbsp. soy sauce
2 Tbsp. vegetable oil
2 Tbsp. rice vinegar
1 Tbsp. sugar
1 tsp. garlic powder
1 tsp. sesame oil
1/2 tsp. pepper
Mix all ingredients well before pouring onto salad mixture.
Wonton Topping
1/2 pkg. wonton skins (sold in the produce dept. in most grocery stores)
vegetable oil for deep frying
Slice wonton skins and deep fry until golden brown. (Chow Mien noodles can be substituted for cooked wonton skins if desired.)
Salad
3 cups torn lettuce
1 cups cooked boneless chicken breast - sliced
1 (8-oz.) can sliced water chestnuts - drained
1 (11-oz.) can Mandarin oranges - drained
1/2 cup julienne cut carrots
1/4 cup diagonally sliced green onions
1/4 cup chopped red cabbage
Mix all salad ingredients and wonton topping and toss salad with dressing.
