Buffalo Chicken Salad

2 hearts romaine lettuce (chopped)
1 cup carrots (shredded)
2 ribs celery (chopped)
1/2 cup ranch or blue cheese dressing
1/2 cup blue cheese crumbles
1 lb chicken breast (cut into bite-sized pieces)
1 Tbs vegetable oil (1 turn of the pan)
2 Tbs butter
salt and pepper
1/4 cup hot sauce
Combine lettuce, carrots and celery in salad bowl.
Toss with dressing and blue cheese crumbles.
Preheat skillet over medium-high heat.
Add oil and butter to hot pan with chicken.
Season with salt and pepper and sear 2-3 minutes, then add hot sauce.
Reduce heat and cook 5 minutes more.
Top salad with buffalo chicken and serve.
