1 lb. boneless chicken breast (cooked and shredded)
1 lb. Monterey Jack cheese (grated)
3 green onions (sliced)
2 doz. corn tortillas
vegetable oil
salt
Combine chicken, cheese, and green onions in a large mixing bowl.
Heat 1/4 inch of oil in a frying pan.
For each tortilla, dip in pan to soften.
Remove and let cool to touch.
Roll about 2 tablespoons of chicken mixture into tortilla.
Return to oil and fry until golden brown.
Transfer to plate lined with paper towels.
Salt generously.
