(an Oakes family recipe)
  1. Combine corn, egg, and flour in a medium mixing bowl.
  2. Heat 1/4 inch of oil in a frying pan.
  3. Drop heaping tablespoon of corn mixture into oil and flatten.
  4. Each corn fritter should be 2 - 3 inch in diameter and 1/2 inch thick.
  5. Turn and cook until both sides are golden brown.
  6. Remove from pan, dry on plate with paper towel.
  7. Eat with butter and salt.
