(an Oakes family recipe)
2 (15-oz.) cans corn - (drained)
2 eggs
1 cup flour
salt
butter
Combine corn, egg, and flour in a medium mixing bowl.
Heat 1/4 inch of oil in a frying pan.
Drop heaping tablespoon of corn mixture into oil and flatten.
Each corn fritter should be 2 - 3 inch in diameter and 1/2 inch thick.
Turn and cook until both sides are golden brown.
Remove from pan, dry on plate with paper towel.
Eat with butter and salt.
