Chicken & Broccoli Stir-fry

1 lb Boneless Chicken Breast (thinly sliced)
3 Tbs cornstarch
4 Tbs soy sauce
2 Tbs peanut oil
1/2 lb broccoli florets
1 medium onion (sliced)
1/2 cut carrots (sliced)
1 can sliced water chestnuts
1 cup chicken broth
steamed white rice
Place chicken, cornstarch, soy sauce and stir until chicken is thoroughly coated.
Let stand for 15 minutes.
Heat oil in wok over high heat
Add chicken and stir fry until browned.
Remove chicken from wok.
Add broccoli, onions and carrots and stir fry 2 minutes.
Add drained water chestnuts.
Return chicken to pan.
Stir in chicken broth.
Cover and cook gently for 5 minutes or until vegetables are crisp-tender.
Serve with rice.
