2 tablespoons olive oil
1 1/2 cups onion (finely chopped)
3 tablespoons minced garlic
3 tablespoons ground cumin
2 pounds ground beef
1 teaspoon ground chipotle pepper
1 1/2 teaspoons kosher salt
2 cups beef broth
1/4 cup tomato paste
Saute onions in olive oil until translucent, 3 to 4 minutes.
Add garlic and cumin and continue to saute until fragrant, about 1 minute.
Add beef, breaking the pieces up as they cook, until meat is browned, about 8 to 10 minutes.
Season with the chipotle pepper and salt.
Add beef broth and tomato paste and bring to a simmer.
Cook, stirring occasionally until most of the liquid has evaporated, about 20 minutes.
