Chicken Taquitos
Ingredients:
- 2 lbs chicken breast - cooked and shreaded
- 2 cups Monterey Jack cheese - grated
- 1/4 cup sliced green onions
- 2 dozen corn tortillas
- vegetable oil for frying
- salt
Directions:
- Combine chicken, cheese, and green onions in a large mixing bowl.
- Heat 1/4 inch of oil in a frying pan.
- For each tortilla, dip in pan to soften.
- Remove and let cool slightly.
- Roll about 2 tablespoons of chicken mixture into tortilla.
- Retrn to oil and fry until golden brown.
- Transfer to plate lined with paper towels.
- Salt generously.
